White Beans with Sage Over Pasta


This is a quick, healthy family meal for those nights you just don't have much time to cook. (By the way, it tastes delicious and my kids love it!) It's also a great recipe for food storage items. You probably have most of these ingredients already in your pantry. Here's what you need:


White Beans with Sage Over Pasta 

One box of shaped pasta - large shells, penne, rigatoni 
1/2 onion chopped
2-3 cloves of garlic minced or 2 to 3 teaspoons of garlic paste 
3 Tablespoons of olive oil
1 can of Great Northern white beans
1 can of garbanzo beans
1 can chicken broth
1 teaspoon of dried sage or 1 Tablespoon of fresh sage chopped
1/2 teaspoon salt
1/4 teaspoon pepper
Pinch of red pepper flakes (or more if you like things spicy)
Shredded Parmesan cheese to garnish

Cook noodles according to package directions.

While your noodles are cooking, heat olive oil in a large saucepan and add onion and garlic. Cook for 2 minutes or until onion is tender. Then, add your beans including their liquid, chicken broth, sage, salt, pepper and red pepper. Reduce heat to low and simmer until flavors are well blended - about 10 to 15 minutes.

To serve: Put noodles in a large serving bowl or in individual bowls. Ladle a generous about of the beans on top of pasta. Sprinkle with Parmesan cheese.
