Fritatas


These mini Fritatas ( like a cross between a quiche and an omelette) are great for breakfast and perfect for a special brunch.  They are simple to make and  are versatile too as you can add in just about anything you like.    This is my go to when I need to make something for a baby shower or pot luck many times. 

Ingredients

6 Eggs
1/2 Cup Cream or Milk
1/2 tsp.  Mustard Powder
3/4 Cup Cheddar Cheese
1/2 Cup Ham chopped (optional)
2 Tbsp. Flat Leaf Parlsey chopped 
2 tbsp. Red Pepper diced
1 Potato 
Olive Oil
2 Cloves Garlic
1/2 Cup Onion
Salt and Pepper to taste

Whip eggs and cream together.  Season with salt and pepper and mustard powder. Add ham, cheese, parsley, and pepper to egg mixture and set aside.  Peel and dice your potato.  Cook over medium high stove with oil, garlic, and onion.  Cook until tender and lightly browned-like you would making hashbrowns.  Spray a muffin tin.  Place about one Tablespoon of potatoes into each cup.  This will be the base of your Fritata.  Pour egg mixture on top of potatoes in each cup about 3/4 full.  Cook at 400 degrees for about 12 minutes or until Fritatas are lightly browned on top.  Allow to cool and carefully lift out.  

Options: 
You can substitute other ingredients (other than cheddar, ham, parsley, and pepper) to create new flavors.  Measurements will transfer to new ingredients, but the possibilities are endless.  Have fun and try something out!  For a more southwestern taste add Monteray Jack cheese, cilantro, ham and pepper.  A more Italian taste add fresh parmesan cheese, fresh basil, ham or prosciutto, and even diced tomatoes.  Enjoy!
