Leprechaun Trail Mix


My kindergartener and I sure had some fun this afternoon making leprechaun trail mix. With St. Patrick's Day just around the corner, this mix would be a simple way to add a little celebration to March 17th!


Here's what we added. First, you have to have some gold or what will the leprechauns find at the end of the rainbow? So, you'll need Rolos.


Besides the color green, orange is an important color of St. Patrick's Day. I bought some dried mangoes to add a little orange to the mix. Unfortunately, the mangoes weren't all that orange. I think dried apricots would be better then.


Skittles are the perfect way to "taste the rainbow" :)


You have to add some salt to all the sweetness. We added pretzels, peanuts, and shoestring potato chips. You need a potato component. We're talking about Ireland after all!


Add all the ingredients to a large bowl and mix.


If you want to pass on some luck to others, bag up your trail mix for family, friends, and neighbors. Or, add some mix to your children's lunch for a surprise. With spring upon us, take some mix with you on your next hike or trip to the park.
