Queso Mac & Cheese

Who doesn't love the comfort of a warm, cheesy mac & cheese?


This recipe is perfect if cooking for one or two.
It's quick and easy!


You'll need:

1 cup macaroni (small shells or elbow)

Cook and drain

Cheese sauce:

¼ cup butter (or 2 Tbsp + ¼ cup salsa)

¼ cup half and half

2- 3.5 oz queso cheese

1/4 tsp salt

dash of pepper

Topping:

¼ cup Panko bread crumbs

1 Tbsp melted butter

 

While cooking the pasta,

Mix the breadcrumbs with melted butter and set aside.


Put all the cheese sauce ingredients into a saucepan
 and combine until butter has melted and sauce is bubbly.
I like using these individual size nacho cheese cups. 
I'm using two for this recipe. 


I love mini whisks for sauces. Choose one with a non-metal handle that won't get hot.

Turn off the heat and add the cooked mac to the pot. 
Stir.
Spray a baking dish (I'm using a loaf pan similar to this) with a cooking oil spray.
Add your pasta mixture.






The pasta & cheese mixture is still hot
so just place your pan under the broiler for a minute or two
 to brown the breadcrumbs.


This is lookin' good!

Add more salt and pepper to taste or ready to eat as is!
You can also substitute some of the butter in the cheese sauce for salsa for more flavor.

Or add some chopped jalapeño to take things up a notch ;)
