Toscano Italiano Soup


Here's our take on an Olive Garden classic.

In a crock pot put:
4 cups chicken broth
2 potatoes - diced
1/2 of a small or 1/4 of a large onion - diced
1 clove garlic - minced
1/4 of a red bell pepper or 3 mini red sweet peppers - diced
1/2 tsp salt
1/8 tsp pepper
1 1/2 tsp Italian seasoning
1 can cannellini beans, rinsed and drained
1/2 of a 16 oz package of Italian sausage, cooked and drained


Cook for 2 hours on high or until potatoes are soft. 
If you want to cook it up faster, 
You can use the stove top instead of crock pot. 
For stove top: put the broth, potatoes, onion, garlic red pepper and spices in a pot. 
Bring to a boil and turn down heat until potatoes soft. 
Then add in your beans an meat.
Next in both cooking methods is to add in:
1/2 cup heavy cream
5 sliced of bacon - crumbled
2 cups of spinach


Cook until spinach is wilted.
Then serve.
You can add a sprinkle of fresh parmesan if desired.


This soup is perfect for a cold day served with your favorite bread for dipping.
