Ready for summer with our fresh pineapple
pico de gallo!
Mixing sweet and spicy in this pico twist.
Perfect for your next summer get together.
You'll need:
2 tomatoes
1/2 red onion
1/2 bunch cilantro
1/2 jalapeno
1/2 pineapple
1/2 tsp. salt
1/2 tsp sugar
1/2 tsp cumin
1/4 tsp pepper
Slice your tomatoes and take out the seeds.
This just helps eliminate extra moister.
Finely dice and put in a medium sized bowl.
Add to the tomatoes,
roughly chopped cilantro,
finely diced onion,
super fine, diced jalapeno (add the whole pepper if you like it HOT)
and chopped pineapple in tidbit sized pieces.
Lay your pineapple on paper towels before tossing into the bowl to soak up some of that extra moister.
Sprinkle on your 4 spices.
Stir until mixed together.
You can serve right away or
give the flavors a chance to blend by
covering and setting in the fridge for 30 minutes.
Stir again before serving.
Sit it out for a crowd with your favorite tortilla chips.
Recipe serves 4.
