This is a family favorite year round, but I make this side dish especially during the winter months. There is something so warm and comforting about it! It's yummy, kid friendly, and easy to make. I've even made it for a potluck using heirloom carrots. It was a hit!
Brown Sugar Carrots
1 pound carrots
2 Tablespoons butter
2 Tablespoons brown sugar
Dash of salt
Cut carrots on the diagonal bite size. In a saucepan, cook the carrots in boiling water until crisp tender. Drain and remove from pan.
In the same saucepan, combine the butter, brown sugar, and salt. Stir over medium heat until well combined creating a glaze. Add the carrots and cook for another 2 minutes or so. Stir frequently. Serve immediately. (I usually double this recipe.)
