Potato Cakes

Enjoy this delicious side dish with herb sour cream- see both recipes below!




Potato Cakes


2 Potatoes, peeled and shredded
2 Green Onion thinly diced
2 Large Eggs, lightly beaten
3 Tbsp. Flour
1 Tbsp. Lemon Juice, fresh 
Salt and Pepper to taste
Butter

Shred your potatoes, I like to use a simple cheese grater.  Add in onions, flour, lemon juice, salt and pepper.  Lightly beat your eggs and add.   On medium heat, melt 2 Tbsp. of butter.  Using a 1/4 measuring cup, scoop out potato mixture and press down into skillet.  Cover and cook for about 4 minutes on each side- until lightly browned.    Serve with my herb sour cream!


Herb Sour Cream

1/2 Cup Sour Cream
1 Tbsp. Fresh Chives
2 tsp. Fresh Dill or Thyme
2 tsp. Lemon Juice

Mix herbs and lemon juice well with sour cream.  Allow to chill or serve immediately.
