Best Buttermilk Biscuits

Your search for a great southern biscuit is over!  These biscuits are so yummy and buttery and flaky- and easy too!  Whip some up tonight for dinner!



Best Buttermilk Biscuits



2 Cups Flour ( I like to use one cup bread flour and one cup good all purpose unbleached flour)
1/4 tsp. Baking Soda
1 Tbsp. Baking Powder
1 tsp. Salt
6 Tbsp. Unsalted Butter, COLD!
1 Cup Buttermilk, COLD!

Preheat oven to 450 degrees.  Combine all dry ingredients and mix well.  Cut your butter into chunks and then add to flour mixture.  Cut the butter into the mixture just until it resembles coarse meal.  You can do this by cutting with knives into the flour, food processor, or pastry cutter.  Make sure you use very cold butter.  Add cold buttermilk and mix in until JUST combined- it should be wet and thick.  Drop balls of dough onto a cookie sheet and bake for about 10 minutes or until lightly browned on the outside.   Enjoy!

Biscuits Tip:

When making biscuits, the most important rule is to always use very cold butter and buttermilk- that will make your biscuits light and fluffy.  Also, it is essential to not overwork your dough, so just mix until the dough comes together.  Overworked dough leads to heavy hockey pucks for biscuits!!!
