Breakfast Casserole

Breakfast Casserole
1 package (1 lb) frozen hash browns, thawed
12 eggs
1 cup milk
3 green onions, diced
1/4 cup yellow bell pepper, diced
1/4 cup red bell pepper, diced
8 pieces of bacon, cooked and crumbled
1 cup cheddar cheese, grated
1/8 tsp. garlic powder
3/4 tsp. salt
1/4 tsp. pepper
Thaw the hash browns.  You can poke a hole in the bag and microwave for a few minutes. Sauté the peppers with a little butter in a saucepan, just to soften.  In a large bowl, mix your eggs and milk.  Add in spices, onion, peppers, cheese, bacon and stir.  Add your hash browns and stir to combine.  Pour into a 9x13 pan.  Bake at 375˚ for 50-60 minutes.  Insert a knife in the center to make sure egg is cooked.  
This is a great recipe for Christmas morning.  Prep/dice all your ingredients the night before.  That morning just combine them all together and bake.  Sub out the yellow pepper for green--then you'll have Christmas colors with the red!
