Pear Apricot Jam
1/2 Cup Finely Chopped Dried Apricots
1 3/4 Cups Water
2 Cups Finely Chopped, Peeled, and Cored Pears (Bosc or Anjou)
2 tsp. Lemon Juice
1 Box Pectin
4 1/2 Cups Sugar
Soak chopped apricots in 1 3/4 Cups water for about 4 hours or even overnight. Pour apricots and water mixture into saucepan. Add pears, lemon juice, and pectin to pot. Bring to full boil stirring constantly. Add sugar and return to full boil and then boil hard for 1 minute-stirring constantly. Remove from heat and skim the foam off the top. Ladle into hot jars. Process for 12 minutes.
This is a delicious jam for winter months when pears are everywhere. Makes around 5 half pint jam jars.
