Basic White Sauce

Basic White Sauce

 I have a daughter that is allergic to something in creamy soups.  When a recipe calls for it, I substitute it for a basic white sauce.  You'll need: 

1 cup chicken broth
1 cup half and half
4 Tbsp butter
3 Tbsp flour

Melt the butter in a sauce pan.  Add the flour and whisk until blended.  


Quickly add the broth and half and half.  Constantly stir until the sauce thickens.  While stirring you can add different spices for flavor.  For a sauce similar to your creamy chicken or celery soups add:
1/8 tsp salt
1/8 tsp pepper
1/2 tsp thyme
1/4 tsp celery seed

I almost never buy creamy soups for recipes anymore.  This is a fast and healthy substitute.
