Blueberry Syrup

Summer brings blueberries and all the wonderful things you can make with them.  We had fun picking blueberries recently and made a delicious syrup that is so good on pancakes, ice cream, waffles or just about anything!  See what local orchards are around your home and then discover the wonderful jams and jellies and syrups you can make!

Blueberry Syrup

2 Cups Fresh Blueberries (could use frozen too)
1 Cup Sugar
1/3 Cup Water
1 Tbsp. Lemon Juice
1/2 tsp. Cinnamon

Wash Blueberries thoroughly.  Combine them with sugar, water, lemon juice, and cinnamon in a saucepan.  Bring to boil over high heat, reduce heat and cover and allow to gently boil for 10 minutes or until the blueberries are tender.  Cool and crush with potato masher.  Strain and separate peels from the juice using cheese cloth or fine strain.  Pour syrup in jar and store in refrigerator.
